Keva - Recipes - Cakes - Mango Cake

Mango Cake

Cooking Time: 35-45 min (baking)

Total Time: 50-65 min

Serves: 1 Kg

Ingredients:

  • CAKE
  • 2 cups refined wheat flour
  • 1/2 cup butter
  • 3 eggs beaten
  • 3/4 cup sugar
  • 1/4 cup sour cream
  • 1/2 cup ripe mango (pieces)
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoons Auris ‘MANGO 24K’ Premium Food Flavour
  • FROSTING
  • 3 tablespoons flour
  • 1 cup milk
  • 1/2 cup butter
  • 1/2 cup shortening
  • 1 cup superfine sugar
  • 1/4 teaspoon Auris ‘MANGO 24K’ Premium Food Flavour
  • Yellow food colour (as required)
  • GARNISH
  • Diced mangoes
  • Celery leaves

Directions:

  1. Cream the butter and sugar together.
  2. Add mango pieces and mix until smooth.
  3. Add the eggs, sour cream, baking powder, Auris Mango flavour and flour.
  4. Mix on low speed for 1 minute.
  5. Pour the cake batter into a greased tube pan.
  6. Bake at 350 degrees Fahrenheit for 25 to 35 minutes.
  7. Allow the cake to cool completely.

Frosting:

  1. Combine the flour and milk together in a saucepan.
  2. Stir with a wire whisk and then cool it on a stove until it is thick.
  3. Remove from the heat and allow the mixture to cool.
  4. Combine the butter, shortening, sugar and Mango flavour, yellow food colour together.
  5. Blend for 1 minute.
  6. Combine the cooked flour and milk mixture with the butter mixture.
  7. Whisk for 10 minutes.
