Mango Cake

Ingredients:
- CAKE
- 2 cups refined wheat flour
- 1/2 cup butter
- 3 eggs beaten
- 3/4 cup sugar
- 1/4 cup sour cream
- 1/2 cup ripe mango (pieces)
- 1 1/4 teaspoons baking powder
- 1/2 teaspoons Auris ‘MANGO 24K’ Premium Food Flavour
- FROSTING
- 3 tablespoons flour
- 1 cup milk
- 1/2 cup butter
- 1/2 cup shortening
- 1 cup superfine sugar
- 1/4 teaspoon Auris ‘MANGO 24K’ Premium Food Flavour
- Yellow food colour (as required)
- GARNISH
- Diced mangoes
- Celery leaves
Directions:
- Cream the butter and sugar together.
- Add mango pieces and mix until smooth.
- Add the eggs, sour cream, baking powder, Auris Mango flavour and flour.
- Mix on low speed for 1 minute.
- Pour the cake batter into a greased tube pan.
- Bake at 350 degrees Fahrenheit for 25 to 35 minutes.
- Allow the cake to cool completely.
Frosting:
- Combine the flour and milk together in a saucepan.
- Stir with a wire whisk and then cool it on a stove until it is thick.
- Remove from the heat and allow the mixture to cool.
- Combine the butter, shortening, sugar and Mango flavour, yellow food colour together.
- Blend for 1 minute.
- Combine the cooked flour and milk mixture with the butter mixture.
- Whisk for 10 minutes.
